Cooking up some campus comfort

banana breadWe call it comfort food for a reason. Our senses of taste and smell are closely connected with memory. The right foods can stir up feelings of home and happiness.

So let’s cook up a little UVic campus comfort with this recipe for Mystic Market Banana Bread. It was created for us by Food Services’ Lead Chef Janice Hepburn.

Mystic Market banana bread

(makes one loaf)

Ingredients:

  • 3 large, very ripe bananas
  • 1 cup brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • ¼ cup whole milk
  • 2 cups all purpose flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • ¾ cup semi sweet chocolate chips

Method:

  1. Whisk together flour, baking soda, baking powder and salt
  2. Mash bananas until smooth and combine with brown sugar
  3. Whisk together eggs, oil and milk
  4. Alternate adding dry and wet ingredients, starting and finishing with flour mixture, stirring just until ingredients are incorporated
  5. Mix in chocolate chips
  6. Pour into a greased and lined loaf pan ( a cake pan will work as well, it just won’t be as high)
  7. Bake at 325F for approximately 1 hour or until inserted skewer/toothpick comes out clean from the batter
