Fritters, family and fun in the kitchen

Looking for a recipe refresh? UVic alumni Umeeda and Nareena Switlo are in the business of flavour innovation. The mother and daughter team started a thriving international food and beverage business together, Naledo, that provides needed employment in Belize. Their signature product, Truly Turmeric, is a spice paste made from whole turmeric root.

We asked the spice-savvy duo to share one of their special dishes with the UVic community. In the resulting video, they show us how to make Mung Bean Fritters, a recipe created by Lella Umedaly, or “Mamajee,” Umeeda’s mother.

Mung Bean Fritters

Ingredients:

  • 1/2 cups split moong dhal 
  • 1/2 cup black-eyed white beans 
  • 1/2 cup cilantro (with stem)
  • 1/2 tsp ginger paste 
  • 1/2 tsp garlic paste 
  • 2 tsp chopped green chili 
  • 1/2 tsp baking soda 
  • 1 tablespoon Truly Turmeric 
  • 1 tablespoon lemon juice 
  • 1 tsp sea salt (optional)
