{"id":563,"date":"2023-05-04T08:18:10","date_gmt":"2023-05-04T16:18:10","guid":{"rendered":"https:\/\/onlineacademiccommunity.uvic.ca\/defaultveg\/?p=563"},"modified":"2024-04-25T16:02:05","modified_gmt":"2024-04-26T00:02:05","slug":"chefs-from-ontario-universities-train-to-cater-to-student-demands-for-plant-based-foods","status":"publish","type":"post","link":"https:\/\/onlineacademiccommunity.uvic.ca\/defaultveg\/2023\/05\/04\/chefs-from-ontario-universities-train-to-cater-to-student-demands-for-plant-based-foods\/","title":{"rendered":"Chefs from Ontario universities train to cater to student demands for plant-based foods"},"content":{"rendered":"<h4 class=\"deck\" lang=\"en\" data-testid=\"deck\">At Western in London, for instance, 40% of student residence menus will be\u00a0plant based by January<\/h4>\n<p>Michelle Both,\u00a0<em><a href=\"https:\/\/www.cbc.ca\/news\/canada\/london\/chefs-from-ontario-universities-train-to-cater-to-student-demands-for-plant-based-foods-1.6829901\" target=\"_blank\" rel=\"noopener\">CBC News<\/a>,\u00a0<\/em>May 4, 2023<\/p>\n<p>That&#8217;s what chefs from Ontario universities did when they gathered\u00a0at Western&#8217;s Saugeen-Maitland residence this week\u00a0in London for a\u00a0culinary training program\u00a0aimed at\u00a0ramping up plant-based choices at student residences.<\/p>\n<p>Instead of the standard pulled pork, for instance,\u00a0sandwiches with shreds of soy-ginger jackfruit\u00a0\u2014\u00a0a tropical tree fruit that,\u00a0if prepared just right, tastes like pulled pork\u00a0\u2014 were among the menu offerings as the get-together wrapped up with a catered lunch.<\/p>\n<p>Twenty-four chefs\u00a0took part in Humane Society International&#8217;s Food Forward program, to explore and experiment with vegan cooking, on Tuesday and Wednesday.
