{"id":94,"date":"2021-02-08T17:43:52","date_gmt":"2021-02-09T01:43:52","guid":{"rendered":"https:\/\/onlineacademiccommunity.uvic.ca\/defaultveg\/?page_id=94"},"modified":"2024-04-25T16:18:07","modified_gmt":"2024-04-26T00:18:07","slug":"uk","status":"publish","type":"page","link":"https:\/\/onlineacademiccommunity.uvic.ca\/defaultveg\/uk\/","title":{"rendered":"UK Universities"},"content":{"rendered":"<p><strong>United Kingdom: <\/strong>Several UK universities removed beef, lamb and dairy from their menus following a major study by scientists from the University of Oxford, which showed that meat and dairy use 87 percent of farmland and produce 60 percent of agriculture\u2019s greenhouse gas emissions while only providing 18 percent of calories and 37 percent of protein. <a href=\"\/\/F209A073-4B50-4157-AC75-D7A36D34C6FA#_ftn1\" name=\"_ftnref1\">[1]<\/a><\/p>\n<h4>University of Cambridge<\/h4>\n<ul>\n<li style=\"list-style-type: none\">\n<ul>\n<li>In October 2016, the university&#8217;s catering service replaced red meats with plant-based products. As a result, &#8220;overall carbon emissions across UCS were reduced by 10.5%. There was a 33% reduction in carbon emissions per kilogram of food purchased, and a 28% reduction in land use per kilogram of food purchased.&#8221; <a href=\"\/\/F209A073-4B50-4157-AC75-D7A36D34C6FA#_ftn2\" name=\"_ftnref2\">[2]<\/a><\/li>\n<li><strong><a href=\"https:\/\/www.zoo.cam.ac.uk\/directory\/andrew-balmford\">Professor Andrew Balmford<\/a> <\/strong>(Conservation Science at the University of Cambridge) reported that the initiative had &#8220;dramatically reduced their environmental footprint.&#8221; Prof Balmford advised the catering service on the changes, observing, &#8220;It is hard to imagine any other interventions that could yield such dramatic benefits in so short span of time.&#8221;<\/li>\n<li><a href=\"https:\/\/onlineacademiccommunity.uvic.ca\/defaultveg\/wp-content\/uploads\/sites\/5920\/2021\/05\/UoC_Sustainable_food_journey_report.pdf\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright wp-image-275 size-medium\" src=\"https:\/\/onlineacademiccommunity.uvic.ca\/defaultveg\/wp-content\/uploads\/sites\/5920\/2021\/05\/sustainable-food-journey_cover-212x300.png\" alt=\"\" width=\"212\" height=\"300\" srcset=\"https:\/\/onlineacademiccommunity.uvic.ca\/defaultveg\/wp-content\/uploads\/sites\/5920\/2021\/05\/sustainable-food-journey_cover-212x300.png 212w, https:\/\/onlineacademiccommunity.uvic.ca\/defaultveg\/wp-content\/uploads\/sites\/5920\/2021\/05\/sustainable-food-journey_cover.png 646w\" sizes=\"auto, (max-width: 212px) 100vw, 212px\" \/><\/a><strong>Project lead Dr. Emma Garnett<\/strong>\u00a0led the <a href=\"https:\/\/solutionsearch.org\/contests\/entry\/131\" target=\"_blank\" rel=\"noopener\">sustainable food initiative<\/a> and reported that\u00a0\u00a0that their &#8220;Sustainable Food Policy in 2016 &#8230; cut their carbon and land footprint of the food served by one-third, so this was a huge success.\u201d She co-authored the journal article &#8220;<a href=\"http:\/\/www.pnas.org\/cgi\/doi\/10.1073\/pnas.1907207116\" target=\"_blank\" rel=\"noopener\"><span style=\"font-size: 1rem\">Impact of increasing vegetarian availability on meal selection and sales in cafeterias<\/span><\/a><span style=\"font-size: 1rem\">&#8221; (<em>PNAS\u00a0<\/em>116:42, 2019).<\/span><\/li>\n<li><strong>Nick White,<\/strong>\u00a0Head of Operations for the University Catering Service said: \u2018This has involved making sacrifices, but is has been absolutely the right thing to do. Tantalising vegan dishes include BBQ jackfruit bites and salted caramel cake with dairy-free whipped cream.
